Homemade Ice Blocks

Nearly every afternoon my kids hit that, hot, tired, cranky stage and more often than not, a nice cold homemade ice block perks them right up!

Smoothies and ice blocks are a great way to use up all those half eaten fruit and veggies that kids love to leave laying around the house! I have a little container in the freezer which I just pop any bits of leftover fruit and veg into, then when I have enough, blend it up with a little coconut water or coconut milk and I have a yummy smoothie or ice block mixture ready to go, with minimal effort!

If you want to make your kiddies’ ice blocks a little more special though, here are a couple
recipes which always go down a treat at our place:

Banana Caramel Ice creams
1 Banana
2 Fresh Medjool Dates
1 Big Dollop of Nut Butter (we like almond)
1 Cup Milk Alternative (we like coconut milk, coconut water also works fine too)
*1 Tbsp Collagen Powder (optional)
Blend together, pour into ice block moulds and freeze for at least 5 hours before serving

Pineapple + Mint Ice Blocks
1 Cup Fresh Pineapple
10-15 Mint leaves
1 Tbsp Honey
1 Cup Coconut Water
*1 Tbsp Collagen Powder (optional)
Blend together, pour into ice block moulds and freeze for at least 5 hours before serving

Each of these recipes generally fills 3 of the Little Giants Ice Block Moulds (and if there’s any leftover, there’s always at least one kid hanging round to try score any leftovers in their
smoothie cup!)

Other healthy, delicious an easy ice block ideas include, kombucha, fresh juices or coconut
water and frozen fruit (blended together or fruit left whole).

Here are a few of my favourites, all of which can be found at most supermarkets:
