These cold, wintery mornings are not over yet and this Loaded Winter Porridge is still a regular around here! Hopefully you and your family will love it as much as we do!
If you can manage it in your budget I recommend you use organic oats to reduce your exposure to pesticides, herbicides and fertilisers. We usually switch between Ceres Organics, Chantal Organics and Harraways Organic Oats depending on what’s on special.
The same with your frozen berries, organic is best. In fact berries are one of the most highly ranked pesticide contaminated produce according to the Environmental Working Group’s Dirty Dozen.
Depending on your tolerance to dairy, you can switch out the nut milk and coconut yoghurt for plain milk and natural yoghurt, but personally we like to limit our dairy intake in our household even though we are not dairy intolerant. Not only does it give your body a break from a sometimes excessive dairy consumption, but it’s good to switch it up and provide your body with the vitamins, minerals and probiotics that come from nut milks and coconut yoghurts.
Our favourite nut milk brands are Nutty Bruce and PureHarvestas they don't contain any artificial colours, flavours, preservatives or gums like a lot of other nut milks.
Our favourite coconut yoghurt is the Raglan Boysenberry Coconut Yogurt but we like just about all flavours of their brand too.
As for the granola we like to aim for something grain-free and low in added sugars. The Ceres Organics Cashew Almond Apricot Grain Free Muesli, Something To Crow About Almond Coconut & Orange Grain Free Muesli and Pure Delish Fruit Muesli Raspberry & Maple Nograin-ola are our go-to’s, once again depending on what’s on special. A little goes a long way with these as you are basically just adding a sprinkle to the top of an already loaded bowl.
This recipe is enough for one serve, I usually make a triple batch for the kids and I to all enjoy together.
Loaded Winter Porridge
Ingredients
1/3 Cup Organic Oats
1/3 Cup Nut Milk
1 Tbsp Water
1/3 Cup Frozen Mixed Berries
1 Tbsp Water
Heaped Spoonful of Coconut Yoghurt
1/4 Cup Granola
Method
- Add the oats, nut milk and water to a small pot. Cook on a medium heat, stirring constantly until nice and creamy. Make sure the temp is not too hot or you won’t get that lovely creamy consistency.
- At the same time add the frozen berries and water to another small pot. Cook these on a medium-high heat, stirring every now and then until you have a nice warm, saucy berry mix.
- Add the porridge to one of the Little Giants Deluxe Suction Bowls, top with a spoonful of coconut yoghurt, the saucy berries and then the granola.
When placing the Suction bowl on the table, press down firmly to make a tight seal and then you have no worries about your little one tipping the bowl over and losing half their porridge!
And if they don’t eat it all, you can just cover with the lid and pop in the fridge to be reheated (with a little extra milk/water, it won’t look as pretty all mixed up but will still taste just as yum).
